Fish dish , got an awesome recipe from my boy Pete.
He got this from his cousin out of the Garden State.
Time to prep no time at all, time to cook 45 min.
First you get a baking pan,11 by 9 glass dish is nicer to use. Glaze your dish with extra virgin olive oil and sprinkle with garlic powder over the olive oil in the dish. This is a nice base to infuse flavor. Layer your fish, throw some butter chunks on the fish. Now layer some garlic powder on top of the butter and fish. Instead of scallops that we’re in original recipe, I used the stems of mushrooms. Pop the stems out of the mushrooms and cut them to look like scallops. I used mushroom stems because most scallops you find are shark meat anyhow. Season with salt and pepper. Top with spinach and drizzle with olive oil. Sprinkle with garlic powder. Bake for 30 minutes then you must drain the liquid. Then top dish with mozzarella cheese and sprinkle with Parmesan cheese. Bake for another for another 15 minutes till it is slightly golden. Garnish with topping of choice. I used dried papaya. This dish is so good you could serve it alone but for a yummy side try a nice house salad and glass of Pinot Grigio.
Recipe Details:
Fish- Use 4-6 fillets depending on size and how many people you are feeding. Tilapia is used in this recipe. Cod is another good choice.
Spinach- A couple of big handfuls
Mushrooms- 10-12 mushroom stems
Butter- 2-3 tablespoons
Extra Virgin Olive Oil- two to three tablespoons to coat bottom of pan and another tablespoon or two to drizzle over spinach
Garlic Powder- season to taste but don’t be afraid to use a lot. Remember you are draining the water before you put on the cheese.
Cheese- 1/2 pound (8 ounces) of mozzarella, and 2-3 tablespoons of Parmesan cheese.
Pinot Grigio- Robert Mondavi
